Week 5 Challenge
Our Team got our heads together and had a few very good possibilities to enter for this challenge and after consultation we have decided to go with this cake.
Xmas for a lot of our whanau is a time for family and friends and some traditions have been passed down through the generations and are maintained today. One of those is the humble Xmas fruit cake. Our fruit cake draws it's roots from the time of the wars where food was rationed and consequently lots of families went without the luxuries of butter, sugar and eggs. It is also of interest to see that our people were a lot healthier then than they are today. Our Champion Nandy has put her spin on this recipe which we found to be flavoursome and moist and would recommend this as a celebratory cake for Xmas.

What an awesome alternative to a sugar sweetened treat! I would love to give this recipe a go, fruit cake is a big xmas tradition in my family too.

I could see the whole recipe on the home page. How does it hold together? Fascinating. I wonder if I can make it with glutenfree flour? I'll have to try it.

Looks amazing. We can't see the recipe - I've clicked on the photo but can't get it to open to see the whole recipe. Can you type it in? That's a very interesting idea - because at celebrations where it is traditional for instance to have a xmas cake, what an amazing idea to have a lower fat version. Thank you.
